Canary Islands in winter: mild warmth, south vs north, and which island to pick.
Tenerife in December, Gran Canaria in January or Lanzarote in November answer the same wish — light in a European winter — with different microclimates. Spain.info speaks of winter averages around 20 ºC and little rain. That mainly describes the south coasts at low altitude. The north and the mountains are another conversation: more cloud, more rain and, on Teide, even the odd snowfall.

The winter sea is usually on the cool side.
I did not find an official AEMET normal for sea temperature by island. In practice the Atlantic in December and January is cooler than in September or October. Plenty of people still swim; others prefer a heated pool. If a sea swim is your number-one test, say so in the quote request so the hotel and coast can be filtered.
Planning example (not a package): for seven nights in January I would choose the south of Tenerife or Gran Canaria, with one outing (Teide or the dunes) and margin for wind. Lanzarote comes in if you want volcanic landscape and less relief. I would avoid two islands in one week unless a domestic flight is confirmed.

Island, coast (south or north), a heated pool if it matters, meal plan and transfer. For “where is hot in January Europe”, the Canaries are the mild answer — not the 30 ºC of a Caribbean beach.

On the south coast, AEMET mean maxima sit around 23 ºC. It is a mild winter, not the tropics. Pack a layer for the evening and for the mountains.

Both work for light. January is a little cooler than November. Lanzarote tends to be drier and windier. The south coast remains the rule for a beach holiday.
Which Canary island is best?
The one that matches your days: south Tenerife or Gran Canaria for resorts; Lanzarote for volcano and calm; the western islands for nature. There is no single winner.
